Here at Yai's, we serve many of our dishes with a scoop of white rice. You can substitute for brown rice or red rice for an additional charge. Brown rice has certainly been staying on the health-conscious radar as a great rice option, but what actually is red rice?
We use Thai Red Cargo rice, a nuttier rice profile than the brown rice. Red rice is a variety of rice that has been colored red by its anthocyanin contents, as it is a non-glutinous long grain rice variety. This particular rice only has the husks of the rice grains removed during the milling process, retaining all nutrients, vitamins, and minerals intact in the bran layer and in the germ. It has a bit of a chewy texture than your typical brown rice and if you're daring, definitely give a scoop of this nutritious side dish a try!
